The Vitamin and Mineral Minute: Riboflavin

Your day breaks, your mind aches. You find that all the words on the back of the cereal box linger on when you leave the table. It’s time for another day at the office.

Luckily for you, manufactured cereals are fortified with all sorts of nutritious vitamins and minerals. The bad news is that some recent studies have found that adding milk can actually strip some of these sprayed on nutrients from your cereal. All the more reason to drink your End Milk boys and girls. Stripping notwithstanding, I think its about time you learned a little more about what goes in your mouth every morning.

Today’s Vitamin and Mineral Minute stars the popular B vitamin Riboflavin. Also known as Vitamin B2, Riboflavin plays a key role in the metabolism of fats, carbohydrates and proteins.

Riboflavin is yellow or orange-ish in color and is often used in food dyes and coloring. Here’s a fun fact! Riboflavin has very poor solubility in water and is a key factor in making your pee yellow. Neat!

Aside from fortified cereals, Riboflavin can also be found in baby food, sauces, pastas, processed cheese and yummy fruit drinks and smoothies. Below you can see the Riboflavin content per serving in some of your favorite cereals:
